In this chapter you will become familiar with a new phenomenon: if you are dealing with two distinct phases, such as a water layer and an oil layer, mass transport can also take place. You will learn how to determine the amount of this kind of mass transport, with the distribution coefficients of a component between different phases and why these coefficients differ. Furthermore, you will learn about the wet bulb temperature that makes it able to calculate the absolute and relative humidity.
